• 2 roasted sweet potatoes, cut into chunks
• Creamy tahini dressing (prepared separately)
• 4 cups fresh rocket
• ⅓ cup crumbled feta
• 1 ripe avocado, sliced
• Fresh lemon wedge
• 3 tablespoons toasted pumpkin seeds
• Sea salt and freshly cracked black pepper
Begin by roasting the sweet potatoes until tender and lightly caramelised. While they cook, prepare the tahini dressing until smooth and pourable.
Arrange the rocket on a serving platter or in a large bowl. Spoon over a little dressing, then layer on the warm roasted sweet potatoes and sprinkle with feta. Add the avocado slices and gently squeeze fresh lemon juice over them to keep their colour vibrant.
Finish with an extra drizzle of dressing, scatter over the toasted sunflower seeds, and season with salt and pepper. Serve immediately while the sweet potatoes are still warm.
