These no-bake brownies are rich, fudgy, and packed with plant-based goodness. Using nutrient-dense ingredients, they balance flavour with skin-friendly nutrition - delivering vitamins, minerals, and antioxidants in every bite.
• 130g pecans (or nuts of choice)
• 50g rolled oats
• 40g cocoa powder
• 60g chocolate chips (plus extra for topping if desired)
• 18–20 Medjool dates
• 250g peanut or seed butter of choice
• 1 tsp vanilla extract
• 1 tsp ground cinnamon (optional)
• Pinch of salt
• 200g cooked sweet potato, peeled
• 150g dark chocolate (70%)
• ¼ cup melted coconut oil
• ⅛ tsp fine sea salt
• Optional spices: cinnamon, cardamom, or ginger
Directions:
• In a blender, combine dates, oats, cocoa, nuts, nut butter, vanilla, and cinnamon until a dough forms. Add more dates if needed to help bind.
• Fold through chocolate chips with a spatula.
• For the frosting, melt dark chocolate with coconut oil, then blend with sweet potato, salt, and spices until smooth.
• Chill frosting in the fridge for 15–30 minutes before spreading over the brownie base.
• Slice, serve, and enjoy.
