Energy Boost Salad

As the busy holiday season approaches, it's easy to feel drained with all the hustle and bustle. If you're looking for an energy-boosting dish to keep you feeling prepped and ready, this vibrant, all-raw salad is the perfect solution!

Light yet nourishing, this salad makes for an ideal quick lunch or refreshing dinner side. Packed with fresh, nutrient-dense veggies, it will give you the natural lift you need to power through holiday preparations.

Ingredients:

  • 3 - 4 long stems of kale 
  • ½ head of broccoli 
  • 6 brussels sprouts
  • ¼ red cabbage
  • 1 carrot 
  • ½ cup fresh parsley
  • ½ cup almonds
  • 2 Tbsp sunflower seeds

Dressing:

  • 3 Tbsp olive oil
  • ½ cup lemon juice
  • 1 Tbsp fresh ginger, grated
  • 2 tsp honey
  • 1 tsp tahini

Directions:

Finely chop the kale, broccoli, sprouts, red cabbage, and parsley. Grate the carrot and add all the vegetables into a salad bowl. Add the dressing* and mix, then top with slivered almonds and sunflower seeds. Enjoy!

*If you are prepping this salad in advance, leave the dressing on the side and add it just before eating.
