Ingredients:
- 3 - 4 long stems of kale
- ½ head of broccoli
- 6 brussels sprouts
- ¼ red cabbage
- 1 carrot
- ½ cup fresh parsley
- ½ cup almonds
- 2 Tbsp sunflower seeds
Dressing:
- 3 Tbsp olive oil
- ½ cup lemon juice
- 1 Tbsp fresh ginger, grated
- 2 tsp honey
- 1 tsp tahini
Directions:
Finely chop the kale, broccoli, sprouts, red cabbage, and parsley. Grate the carrot and add all the vegetables into a salad bowl. Add the dressing* and mix, then top with slivered almonds and sunflower seeds. Enjoy!
*If you are prepping this salad in advance, leave the dressing on the side and add it just before eating.
